1 cup corn oil, 1 ½ cup sparkling water, 1 ½ cup corn flour, 2 cups of all-purpose white flour, 1 tsp salt, 2 ½ tsp baking powder, 1 cup of shredded feta cheese, 1 kg of mixed greens (spinach, nettles, wile spinach, poppy and swiss chard), 1/3 cup of oil, salt, 2 tbsp flour, 3-4 tbsp of corn flour to top over the greens
Cut and clean the greens. Add them into a pot without water. Let them boil over medium heat. Once boiled, add oil and salt. Mix until melted. Add 2-3 tbsp of flour to thicken. In a bowl, add oil, sparkling water, salt, pepper and flour. Mix until moderately thickened. Butter the baking tray, spread the base, add the feta and slowly add the filling. Finally, dust the surface with 3-4 tbsp of corn flour.
