Break the apricot seeds and remove their kernels, which we add into a jar where we’ve added some cognac and aromatics. Close the jar with a lid and leave in the sun for 40 days. On the last day, drain the contents of the jar. Boil the scented cognac with sugar until the sugar has completely melted. Let cool and store in a glass bottle. It is a drink with an intense flavour of bitter almond. It is very sweet and usually made around summer.
