Open 3 or 4 fyllo pastry layers, brush with lard (or butter) and spread them out onto the baking tray. Boil sweet trahana until thickened. Add salt, cheese and pork scratchings. Pour this thickened mixture over the fyllo pastry and top off with pork scratchings and cheese. (In our region, trahana pie is commonly made with cheese alone, without pork scratchings). Bake in stoneware pot (or oven) until the pastry is golden brown and crispy. Pork scratchings: The meat that comes off along with fat when removing the leftovers of pork meat.
